Corn and Zucchini Salsa


INGREDIENTS:
2 tablespoons white wine vinegar
1 tablespoon olive oil
1/2 teaspoon cumin
1 clove garlic, crushed
2 cups fresh or frozen corn kernels
1 cup coarsely chopped zucchini
1 cup chopped, seeded red bell pepper
1/3 cup chopped green onions (I used Red)
1 tablespoon Cilantro
Oregano

DIRECTIONS:
Combine vinegar,oil, cumin and garlic; mix well. Stir in remaining ingredients. Refrigerate. Wonderful with grilled chicken, fish, or ribs.
